Learn to make incredible, life-affirming salads and dressings with life-time salad maker and plant lover Leah Nguyen. She even has a ‘salad theory’ to guide you on your own inventions! Making wonderful salads is all about using what is fresh and available to you, cutting things at the right scale, honing how you pay attention to the energy of the ingredients and being bold in our use of flavors. Some of Leah’s favorite challenges are making salads with whatever is in a person’s refrigerator & cupboard. A recent win: shredded carrots, minced onion, and thinly sliced canned pineapple dressed with white vinegar, olive oil and salt.
We will construct 2-3 salads and dressings in the class. You will leave not only having had a delicious lunch of our salads and pie, but with salad for 2 to take home with a jar of dressing and printed copies of additional recipes and Leah’s salad theory.

About the instructor: Leah is an artist-healer, single mother, plant lover, salad creator and UW staff, living and working in Seattle. She loves making salads that feature fresh herbs, that perfectly fit a meal, and that surprise with their delicious vibrancy. Several years ago she wrote down her salad theory for the first time, realizing that there were some key things that brought salads above the norm!
